El boniato lo dejamos entero para que no se deshaga. Escurrimos las judías y las ponemos en una olla con el agua fría. Ponemos la olla al fuego y a la media hora de estar hirviendo las judías, añadimos las verduras. Comprobamos que hay suficiente agua, si no le añadiríamos.

- Cuando vuelva a hervir, bajamos el fuego y añadimos las lentejas. De vez en cuando, vamos removiendo todo el contenido de la olla para que no se pegue, y siempre comprobando que no falte agua. Mientras que en la olla se están cocinando las verduras y las legumbres, en una sartén ponemos el aceite para sofreír los dientes de ajo enteros y sin pelar. Después añadimos la cebolla, el tomate rallado, el pimentón y el azafrán.
- Cuando el sofrito esté hecho, lo añadimos a la olla y dejamos que siga hirviendo, unos 30 minutos más o menos, y volvemos a comprobar que tenga el agua suficiente para luego cocer el arroz. Separamos caldo para cocinar el arroz. Una vez hecho el arroz, lo repartimos en los platos y añadiremos la verdura de la olla.
