- Añadimos ahora la zanahoria troceada a rodajas y el puerro. Vamos removiendo de vez en cuando y añadimos aceite si hace falta.
- Después de un par de minutos, ponemos el tomate cortado en 4-6 partes, la calabaza troceada y el calabacín. Procuraremos que los trocitos de verdura tengan tamaños similares.
- Lo dejamos un minuto más.
- Lavamos un poco las lentejas y las añadimos a la olla. Ponemos agua fría. Tiene que cubrir las lentejas y un par de dedos más.
- Añadimos la hoja de laurel y sal al gusto. Tapamos la olla y dejamos que a se vaya cociendo a fuego lento-bajo durante unos 20 minutos. De vez en cuando miraremos que no les falte agua.
- Añadimos las patatas cortadas (a mí me gusta “cascarlas” porque le dan espesor al guiso). Dejamos cocer unos 15 minutos más, más o menos.
- Cuando veamos que las patatas están cocidas, añadiremos un poco de pimentón y dejaremos reposar unos 5 minutos y ya están listas para comer!
